Is this not the coolest thing?? It feels like magic every time I sprout these little cuties. 1 cup dried mung beans turns into all this in just 3 days. #mungbeanmagic
Mung beans are one of the healthiest sources of plant protein there is when you consider how many other nutrients they contain in addition to amino acids (the building blocks of proteins). As the Journal of Chemistry Central puts it, “mung beans have biological activities including antioxidant, antimicrobial, anti-inflammatory, antidiabetic, antihypertensive, lipid metabolism accommodation, antihypertensive and antitumor effects.” ***So it sounds good to me! What does all that mean🤔...they’re really freakin good for you🤷♀️. They are fun to make, it feels like a science experiment every time👩🔬. And they give food a nice crunchy texture while barely tasting like anything - so win win!
